SLOW COOKER CIDER-BRAISED POT ROAST



Intro: This flavorful recipe is both quick and easy to prepare and can be made in bulk, making it the perfect meal prep option for your weekly nutritional needs! It is low in carbs, and very high in protein, making it a great choice for those on a low carb diet!

Cook Time: 6-9hrs

Ingredients:

  1. 1c apple cider

  2. 3tbsp tomato paste

  3. 2tbsp flour

  4. 2tbsp worcestshire sauce

  5. 3 medium parsnips (chopped into small slivers)

  6. 2 medium sweet potatoes (cubed into bite size pieces)

  7. 1 medium onion (chopped)

  8. 4 cloves garlic

  9. 2 sprig rosemary

  10. 3lbs chuck roast

  11. salt (to taste)

  12. pepper (to taste)


Directions:

  1. In a 5-6qt slow cooker, whisk together cider, tomato paste, flour, Worcestershire sauce, and 1/4 teaspoon salt and pepper.

  2. Chop sweet potatoes into small, bite sized cubes. Chop the onions and parsnips.

  3. Add the parsnips, sweet potatos, onions, garlic, and rosemary, and toss to combine.

  4. Season the roast with 1 tsp of salt and pepper and place in crock pot amongst the vegetables. Cook on high for 6-7 hrs or on slow for 8-9 hrs.

  5. Transfer the roast to a cutting board and slice, Serve with vegetables.
