PRESSURE COOKER GARLIC SHRIMP AND CHORIZO

INTRO: This recipe hits close to home, reminding me of a more complex and protein packed iteration of a childhood favorite…rice-a-roni. If you like the creamy, smooth texture of rice-a-roni, then this recipe is for you! Enjoy!


PREP TIME: 20 minutes

COOK TIME:  30minutes

DIFFICULTY: Beginner


INGREDIENTS: 

  • 2tbsp olive oil

  • 1tbsp sherry

  • 1 tsp paprika

  • 6 cloves minced garlic

  • Salt and pepper, to taste

  • 1lbs peeled and deveined jumbo shrimp, thawed

  • 6oz chorizo, casings removed

  • 1 finely chopped red bell pepper

  • 1 thinly sliced small onion

  • 2 cups long grain rice

  • 1tsp crushed red pepper flakes

  • 1 cup parsley

  • Juice of 1/2 lemon


DIRECTIONS: 

  1. Whisk the olive oil, sherry, paprika, garlic, 1/2 tsp salt and 1/4 tsp pepper in a medium bowl. Add in shrimp and mix until combined

  2. In a pressure cooker, add chorizo, red pepper, onion, red pepper flakes, rice, and 3 cups of water. Top with shrimp mixture and stir to combine.

  3. Put the lid on the pressure cooker and cook on the RICE setting.

  4. Add parsley, lemon juice, and stir.
