INGREDIENTS:
2tbsp olive oil
1tbsp sherry
1 tsp paprika
6 cloves minced garlic
Salt and pepper, to taste
1lbs peeled and deveined jumbo shrimp, thawed
6oz chorizo, casings removed
1 finely chopped red bell pepper
1 thinly sliced small onion
2 cups long grain rice
1tsp crushed red pepper flakes
1 cup parsley
Juice of 1/2 lemon
DIRECTIONS:
Whisk the olive oil, sherry, paprika, garlic, 1/2 tsp salt and 1/4 tsp pepper in a medium bowl. Add in shrimp and mix until combined
In a pressure cooker, add chorizo, red pepper, onion, red pepper flakes, rice, and 3 cups of water. Top with shrimp mixture and stir to combine.
Put the lid on the pressure cooker and cook on the RICE setting.
Add parsley, lemon juice, and stir.
