LOW CARB/ FAT ENCHILADAS

Intro:

These low fat and low carb tortillas have been a staple in my weekly dinner routine for six months, and I'm still not tired of them yet. Subbing out high carb tortillas with low carb tortillas, and full fat meat and cheese with low fat alternatives makes this recipe both delicious and nutritious! Truly a must try for anyone craving variety on a diet!

Prep Time: 5 mins

Cook Time: 20 mins

Servings: 6


Ingredients:

  1. 1.5lbs of 96% lean ground beef

  2. 0.5 white onion

  3. 1 package of Taco Bell seasoning

  4. 1 package of low net carb tortillas of choice (we used the La Tortilla Factory brand)

  5. 1/2 package Stater Bros mozzarella and cheddar fat free cheese

  6. 14oz enchilada sauce


Directions:

  1.  preheat oven to 350 degrees.

  2. Season beef with Taco Bell seasoning and cook with finely diced onions in pan until the meat is brown

  3. Grease bottom of 13x9 glass pan with enchilada sauce

  4. Warm tortillas on stove

  5. Dip both sides of each tortilla in enchilada sauce

  6. Scoop meat mixture into tortillas and add cheese

  7. Roll up enchiladas and add cheese and sauce to the top of enchiladas

  8. Bake for 15 minutes or until cheese is melted

-231 cals

-20g carbs (15g fiber)

-34g protein

-8g fat
