Growing up, my mom regularly made enchilada casserole and homemade tortilla chips. As an adult, I realize just how fatty that meal was. But ive missed it... so I took one of my favorite mexican American dishes, and swapped out all of the ingredients with low calorie alternatives. The result? You'd never know it was low calorie! Since this recipe feeds 8, it is a great option for dinner if you have a big family, or for your weekly meal prep.

INGREDIENTS:
1 package (14) small low carb tortillas
1lb 96% lean ground beef
1/2 small onion
1, 12oz can of green enchilada sauce
16oz fat free sour cream
1, 10.5oz can of light cream of chicken soup
1, 7oz can of green chilies
1, 8oz bag of low fat or fat free cheese
Garlic salt, salt, pepper to taste
DIRECTIONS:
Chop up a small onion
Brown one lb of 96% lean ground beef in a pan and season it with garlic salt, salt, and pepper
Mix your onion, ground beef, light sour cream, cream of chicken soup, and green chilies in a bowl. Season your ground beef mixture as desired
Coat the bottom of a casserole dish with enchilada sauce
Add a layer of low carb tortillas and coat them with enchilada sauce
Spread half of the ground beef mixture across your tortilla
Add 1/2 bag of either non fat or reduced fat cheese
Repeat layers
Cook casserole in an oven for 40 minutes or until the cheese is bubbly and melted
