ASIAN INSPIRED SHRIMP RICE BOWLS



Intro: This recipe is light, but packs a flavorful punch. If you're craving a tasty but healthy asian inspired rice dish, give this recipe a try!


Prep Time: 10 mins

Cook Time: 20 mins

Servings: 3

Level: Beginner


Ingredients (sauce):

  1. 2tbsp Hoisin sauce

  2. 4tsp soy sauce

  3. 4tsp sugar

  4. 1tsp sesame oil

  5. 2tsp minced garlic


Ingredients (bowls):

  1. 16oz cooked, peeled, and deveined shrimp

  2. 2 cups rice

  3. 3 mini cucumbers, quartered

  4. 4 stalks green onion, thinly sliced

  5. 1tbsp toasted sesame seeds


Directions:

  1. Cook rice in pressure cooker or on stove, however desired.

  2. Combine sauce ingredients into a bowl. Toss 1/2 of the sauce into a tupperware container with thawed out shrimp and shake until the shrimp is coated in sauce. Pour the other 1/2 sauce into a small ramekin for serving.

  3. Cut up veggies and prepare toppings for bowl assembly

  4. Spray medium sized pan with olive oil spray and heat shrimp on medium heat until warm all the way through

  5. Assemble bowls in layers - rice, shrimp, toppings, and serve! Use your extra sauce for dipping, or pour it in your bowl and mix it into your rice. Enjoy!
